Chateau Batailley

The Chateau Batailley vineyard sits on a plateau at the southern end of Pauillac, on the site of a battle between the French and the English during the 100-Year War.

The Grand Cru Classe is a beautifully smooth and elegant wine, deep red in colour and has a very focused, intense bouquet with blackberry, raspberry, cedar and mineral notes. The palate is medium-bodied with fine tannins, well-judged acidity, a touch of white pepper lending edginess, gradually building to a very composed and structured finish.

GRAPE VARIETALS: 70% Cabernet Sauvignon, 25% Merlot, 3% Cabernet Franc, 2% Petit Verdot

VINIFICATION & AGEING: Fermentation: 15-20 days. Maturation: 16-18 months in oak barrels

ALCOHOL CONTENT: 13.5% Vol.

FOOD PAIRINGS: Pair with all types of classic meat dishes, veal, pork, beef, lamb, duck, game, roast chicken, roasted, braised, and grilled dishes. Chateau Batailley is also good with Asian dishes, hearty fish courses like tuna, mushrooms, pasta, and a myriad of hard and soft cheeses.

Robert Mondavi is considered the godfather of the California wine movement. His vision is to create Napa Valley wines that would stand in the company of the world’s finest. His ‘To Kalon’ vineyard is rated #1 in the USA and #5 in the world.

This Cabernet Sauvignon has a beautiful nose redolent of fresh, ripe blackberry and black plum jam, gently framed by notes of dried thyme and toast. On the palate, it is full and juicy, brimming with more black fruit and touches of bittersweet chocolate, mint, and dried straw. Generous and harmonious, with velvety tannins and a long smooth finish. A Napa Valley Classic.

GRAPE VARIETALS: 87% Cabernet Sauvignon, 5% Merlot, 4% Petit Verdot, 3% Cabernet Franc, 1% Malbec

Il Pino di Biserno

Il Pino di Biserno label fittingly depicts a coat of arms with two wild boars and the motto “In Tempre Uniti” – In time, Unison. The boars reflect the founder and owner, Lodovico Antinori’s passion for hunting.

A classic Bibbona wine. Distinguished by its timeless elegance, its excellent balance and its intriguing aroma. A deep purple red with a bright rim. Lively, crunchy fruit on the nose, with a hint of green pepper. The nose becomes increasingly intense as it evolves into sweet dark fruits such as prunes and figs, delicately interlaced with spicy notes of nutmeg and vanilla. A captivating feast for the senses and a wonderfully structured wine designed to give maximum pleasure! On the palate it is extremely full, yet soft, generous with velvety tannins and perfect balance.

GRAPE VARIETALS: 38% Merlot, 27% Cabernet Franc, 23% Petit Verdot, 12% Cabernet Sauvignon

VINIFICATION & AGEING: The grapes were carefully selected on the vibrating belt at the winery. After destemming and soft pressing, the alcoholic fermentation took place in truncated conical steel tanks for 3-4 weeks at 28C. 25% of the wine underwent malolactic fermentation in barriques and the rest in stainless steel. The wine was aged partly in new and second-fill French oak barriques, while the remainder stayed in stainless steel. The wine was then aged in bottle for a further six months before release. 

ALCOHOL CONTENT: 14.5% Vol.

FOOD PAIRINGS: Pairs well with red meat, game, game bread, grilled, braised, fried. 

Talbot

Legend has it that the name of this imposing estate originates with Connétable Talbot, a famous English warrior, defeated at the battle of Castillon in 1453, during the 100-Year War. Talbot is one of Médoc’s oldest estates, its glory never tainted.

This wine is a beautiful seductive purple robe. The nose is charming with aromas of blackcurrant and spice notes. The palate is supple, suave with well-melted tannins, good length for a seductive finish.

GRAPE VARIETALS: 54% Cabernet Sauvignon, 46% Merlot

VINIFICATION & AGEING: Fermentation in stainless steel tanks
Sorting: Successive (manual and optical/floating sorting) Ageing: 15 months in oak barrels (15% new)

ALCOHOL CONTENT: 13.5% Vol.

FOOD PAIRINGS: Talbot is best served with all types of classic meat dishes, veal, venison, beef, lamb, duck, game, roast chicken, roasted, braised, stewed, and grilled dishes. Talbot is also good when served with Asian dishes, hearty seafood, or richly textured fish like tuna, mushrooms, pasta, and cheese.

The Journey of La Spinetta began in the 1960s with Guiseppe Rivetti and his wife, who had a vast knowledge for winemaking. As the generations progressed, their children took over the winery and worked to implement the knowledge, traditions and teachings passed down by their parents.

A sophisticated, powerful, full-bodied ruby red wine that creates a harmonious and well-balanced flavour on the palate. Sweet, rich aromas with notes of ripe red fruits, candied orange and gillyflower. Generous on the palate with complex, plush tannins. It is the perfect harmony between structure and freshness

GRAPE VARIETALS: 100% Nebbiolo

VINIFICATION & AGEING: Fermentation: 10 days. Maturation: 22 months in French oak barrels. Bottle aged for 6 months.

Aloxe-Corton

Aloxe-Corton 1er Cru 'les Chaillots'

Aloxe-Corton is the home village of the Latour family. For 11 generations, they have been creating unforgettable wines. The name “Les Chaillots” refers to the stony, pebbly nature of the soil in this vineyard, as “caillou” is pebble in French.

Of a deep ruby color, the Aloxe-Corton 1er Cru “Les Chaillots” 2017 offers a complex nose mixing aromas of black cherry, coffee, undergrowth and licorice. The palate is smooth and velvety. An elegant wine with light toasty notes and mellow tannins.

GRAPE VARIETALS: 100% Pinot Noir

VINIFICATION & AGEING: Fermentation: Traditional in open vats.
Ageing: 10 to 12 months ageing in oak barrels, 35% new. Barrels: Louis Latour cooperage, French oak, medium toasted. 

ALCOHOL CONTENT: 13.5% Vol.

FOOD PAIRINGS: Game birds, poultry and mature cheeses.

Speri Winery

SPERI VIGNETO - AMARONE DELLA VALPOLICELLA CLASSICO SANT'URBANO

The Speri Winery, with a story that begins in the first half of the 1800s, has now entered its 7th generation. The Speri family believe that wine is the “fruit of the earth” and only use grapes from their own vineyards. In 2015, the winery achieved organic certification.

The Amarone Sant’Urbano is a superb example of a fine, classic wine. A deep garnet red in color, it has an ethereal and harmonious bouquet, with hints of red fruit, dried plum, licorice and spices. On the palate, it is full-bodied, warm, mouth-filling and dry. A substantial wine of rare elegance that lends itself well to ageing.

GRAPE VARIETALS: 70% Corvina Veronese e Corvinone, 25% Rondinella, 5% Molinara

VINIFICATION & AGEING:

Manual selection of the finest bunches followed by drying for around 100 days, with a loss of about 40% in the weight of the grapes. These are destemmed and pressed and fermentation with maceration takes place in temperature-controlled stainless steel tanks. Ageing takes place in 24 months in 500 l. French oak tonneaux and 18 months in medium-to-large Slavonian oak casks. Maturation in bottle for 12 months. 

ALCOHOL CONTENT: 15% Vol.

FOOD PAIRINGS: Excellent with richly flavoured main courses based on red meat, such as braised meats and game and perfect with mature cheeses. It can also be enjoyed on its own at the end of a fine dinner.
