That perfect fire-grilled flavour, impossibly tender texture and a general feeling of utter indulgence you experience at the Hunter & Barrel, doesn’t happen by chance. Chef Kamil Bouloot leads our Middle East kitchens with extensive experience and an unshakeable passion for providing plate-after-plate of food, that makes so many of our diners stop in their tracks to give him a (socially-distant!) high-five. 

With almost 30 years of hands-on food production and service experience within the hospitality industry, Chef Kamil has worked with some of Lebanon’s most prestigious hotels and venues. This includes Faqra Club, Century Park Hotel, Phoenicia Hotel, Mövenpick Hotel Beirut, InterContinental Phoenicia and Le Royal Hotel. 

He is head of Culinary Arts at the Université Saint Joseph in Lebanon, an active member of L’Académie Nationale de Cuisine, and has been a pivotal part of the Hunter & Barrel family as we expand into the Dubai premium restaurant scene.

Greatest career moment to date?  

I once read: “In every cook’s life, there comes a moment. It’s not a moment you can anticipate, but is certainly one you can prepare for. It’s the moment when you stop following recipes to the letter and start cooking based on what you know.” This quote is taken from Adam Robert’s book, Secrets of the Best Chefs, which accurately describes the turning point of my career.

What’s the most memorable feedback you have ever received about your food? 

I always strive to prepare dishes with love and passion. Therefore, the best feedback I can ever have is the satisfaction on people’s faces when they first taste the dishes I have prepared. It’s also wonderful when they let you know that they truly love the flavour of the food. 

Stand-out dish on the Hunter & Barrel UAE menu? 

The Gazelle and Wagyu Skewer. Because of its original marination, and the fact it’s grilled on a natural charcoal grill, giving it that smoky, unique taste.

Describe the most complicated prep going on in the Hunter & Barrel UAE kitchen.

Monitoring the wet ageing and the grilling process of our meats. These are essential preparation techniques used in our kitchen in order to guarantee mouthwatering steaks at Hunter & Barrel – time and time again.
